I have a family (that I was born into, that kind) that firmly believes my family (hubby and kid) are poor. Being Diabetic actually costs quite a bit of money, money that could buy things for kids or pay for fun family activities among other things. therefore, yeah I’m ‘poor’ since we spend money on things needed like rent, not wanted such as going out to eat. Which is why I made this image.

I actually made two of those plate sized personal pizzas last night.

1).I used some Archers Farm premade crusts, they come in a two pack but I got them free.
2). I also have a daughter that claims to be allergic to tomatoes, she really just hates them (yes I keep trying to correct her into saying she hates them and not use the word allergy) so we used Alfredo for our pizza sauce.
3). Then we added a little cheese we used a mix of Sargento mozzarella and whatever Sharp cheddar my hubby picked up.  Cheese is the glue to hold a pizza together.
4). Pepperoni! We added a whole package (that we got for $1 at Dollar Tree)  evenly onto the two pizzas, it was actually more then we needed but we still did it!
5). Then more cheese.
6). Finally topped with bits of cut up bacon.

All in all these two plate sized pizzas cost me less the $4 to make.

Sure its not Papa Murphys or Pizza Hut but I don’t have $20.00 or more to spend on ONE meal that might have enough left overs for one person to have lunch the next day. does this mean I never get those? no it does not, maybe 2-3 times a year we get Papa Murphys if there’s extra money to spend and we’re feeling lazy.
